Homemade Oreos

Terry Swan submitted this recipe in our Katy ward cookbook and my family loves them. I actually don't like oreos, but I love these because they are soft and chewy. They are simple to make and the frosting can be colored for any holiday, baby shower, etc. The cream cheese frosting makes them irresistible.

Cookies:
2 boxes devils food chocolate cake
1 c oil
4 eggs, beaten

Mix cake mixes, eggs, and oil together. Roll into 1-inch balls or smaller. Bake 7-10 minutes at 350. Don't overbake.

Frosting/Filling:
1 (8-oz) pkg cream cheese, softened
1 lb powdered sugar
2 T butter
2 t vanilla

Mix cream cheese, powdered sugar, butter, and vanilla together and spread between two cookies. Hard cookies will soften once icing has been on for several hours.

Variation: I also made these with lemon cake mix and they were so yummy.
