When our boys were little, we watched an episode of Blue's Clues where they made banana muffins. They looked oh, so yummy... So, aA few years ago, I bought a Gold Medal kids cookbook with a banana muffin recipe that we now love to make together. And everytime we have aging banans, we whip out this recipe. I often double it, depending on how many bananas I have. These are perfect to serve at a brunch and kids love them.
Banana Muffins:
1 c sugar
1 1/2 c mashed over-ripe bananas (3-4 large)
3/4 c canola oil
2 eggs
2 c flour
1 t baking soda
2 t vanilla
1/2 t baking powder
1/2 t salt
Heat over to 325. Spray muffin pans with nonstick spray. Mix sugar, bananas, oil, and eggs in mixer until blended well. Stir in remaining ingredients and mix just until blended. Pour into muffin pans. Bake until a toothpick inserted comes out clean, around 20 minutes. Let cool 10 minutes and then loosen and remove from pan. Let cool completely and place in air-tight container.
