My friend, Toria, gave me this recipe after I tried it at a party she had for her son. It is so easy to make, she has me converted over to making this almost every week. My favorite dippers for this hummus are crunchy cucumbers rounds and fresh pita bread. I also love Hummus sandwiches: spread a pita with hummus and add sliced tomatoes, cucumber, onions, and lettuce.
Creamy Hummus
2 19-oz cans chickpeas (garbanzo beans) drained & rinsed
1/2 c tahini (sesame seed paste)
1-2 lemons, squeezed for juice
2-3 cloves garlic, peeled
1 T. extra-virgin olive oil
1 t ground cumin
1 heaping 1/2 t salt
1/4 t black pepper
3/4 c water
Place all ingredients (except water) in the food processor and process until smooth, occasionally scraping down the sides. Add the water slowly (while processing) through the feed tuve at the top.
Optional: can also add 1/4 t ground coriander and 2 T minced fresh parsley
