I love cilantro in anything! This is amazing served with a Mexican green salad. Use as a marinade for grilled chicken and serve on top of salad.
1 1/4 c packed coarsely chopped cilantro
1/2 c olive oil
5 T. fresh squeezed lime juice (or white wine vinegar)
2-4 crushed garlic cloves
1 t. ground cumin
1 t. minced, seeded serrano chili
1/2 t. salt
1/4 t. pepper
Combine in food processor until almost smooth. Add more salt and pepper to taste. Better if made ahead to allow flavors to develop. Cover and chill.
Before serving, bring to room temp, rewhisk and serve. Makes 1 2/3 cups.
