I tried this recipe at my mom's ward Relief Society Backyard BBQ two years ago. It is so good.
Grilled Teriyaki Chicken:
20 oz can pineapple chunks OR 1/4 c pineapple juice
1/2 c soy sauce
1 T molasses (optional)
2 T brown sugar
1/4 c canola oil
3 T cider vinegar
1 t garlic powder or 3 cloves minced fresh garlic
1 t ground ginger
6 boneless, skinless chicken breasts
1 green pepper cut into strips (optional)
Drain pineapple chunks and reserve liquid. Combine pineapple juice, soy sauce, molasses, brown sugar, oil, vinegar, ginger and garlic. Marinate chicken in fridge for 6-8 hours. Drain liquid and grill on BBQ.
Another grilling method that works great for camping is to cook the chicken, pineapple chunks, and green pepper wrapped in foil on the grill.
